Pasta Cooking Class

A small course to discover the secrets of the ancient Salento cuisine! During the course the main techniques for the preparation of the typical Salento homemade pasta will be explained, the differences between the main types of dough (egg, water and flour, durum wheat pasta) and the use of different flours to obtain alternative pasta. Furthermore, it will be shown how to knead and roll out the pastry and how to make the traditional Salento pasta shapes (orecchiette, “minchiareddrhi”, “sagne torte”). At the end of the course there will be a tasting of the results of one’s work. Meeting directly on site. It is also possible to reach the location aboard an ancient Fiat 500 (info). Small groups (2-10 people), lasting about 2 hours, language: Italian.
